- 3 lbs flat cut corned beef brisket (1.4 kg)
- 1 packet spice mix included with corned beef
- 1 tbsp black peppercorns
- 6 baby potatoes (scrubbed and cut into quarters) (nigh i½ lbs)

- ½ tsp dried thyme
- two tbsp extra virgin olive oil
- 2 tbsp vegetable oil
- i tsp mustard seeds
- 2 cloves garlic (minced)
- ½ caput cabbage (cut into five or 6 wedges) (1 lb/450g)
- ½ cup water (120ml)
- Common salt to taste
